tinkering with a new bbq sauce

    I'm experimenting with a new vinegar based bbq sauce and I need a thickening agent ...any ideas ?

    I have thought about corn starch but I don't like the way it lightens the color

    Was gonna suggest gelatin or fruit pectin.
