Ok, so I was just informed that I am cooking for two parties Saturday, not one.
One group will be here at 1:00 and the other at 6:00 and both want ribs. (That's what I get for facebooking my past endeavors)
So here's the question, is there a way I can do a partial smoke for the second group so I'm not tending the smoker through the first party?
I'm thinking do the 3 part of a 3-2-1 method and then foil and cooler them, it would be a few hours before I start them back up again.
I'm using a weber kettle so I will not have room to do them all at once.
Open to any and all suggestions.
These will be standard pork spares.
