Time for ribs.......

This weekend my wife is hosting a medium sized party for her neice. Round 25-30 people will be here.... I am planning on making 3 whole racks of ribs..... They are brinning right now as we speak... 1st I used Sea Salt for a base then added 3 cans of Ultra and 1 Bottle of Sam Adams Irish Red for added flavor, then I added a little pepper and onion powder, then topped off with water......

About 10 mins ago I made 2 different rubs. 1 is a brown sugar base with some paprika, garlic and onion powder the other is smoke cheypotly pepper with everything above cept the brown sugar.

For the Brown Sugar rub i plan of using apple chips for aprox 2-3 hours, spraying down with apple juice and then on Saturday finish them off on the grill with a sweet BBQ sauce for a glaze....

For the Pepper Rub I plan on using Southern Hickory chips for aprox 2-3 hours, spraying down with apple juice and then on Saturday finish them off on the grill using a Texas BBQ sauce for glaze....

Let me know what you guys think about these flavor combinations......
 
3 racks of rib and 25-30 people? Are you going to have enough ribs for everyone or are you serving something else too?

I agree with Dutch on the amount.

If the ribs are the only meat, I hope the peeps are all ladies.

That would be plenty for 25 of Mrs Bear's friends, but could get a might bloody if it was my friends!

Ditto on the quantity of ribs.I usually get about 10 -12 servings from 3 racks if I am serving sidesIs that 25-30 including little ones, how many adults.Whatever you do make sure to throw on something else to supplement the main course, 3 wont be enough for a main course.I think I would go with the tried and true 3-2-1 method, you can use your grill for the last half hour of the 1.
 
My wife was the official photographer of the event... She never got any pictures of the ribs.... Not only did we have Ribs, I also BBQ 3 LBS of Boneless Chicken that was marinated, 2 different types of Pasta salad, Potato Salad, Cole Slaw, Buffalo Chicken Wings, Burgers and Hot Dogs, 3 different kinds of Chips, Portuguese Style Baked Beans (Slow Cooker Version) and last but not least a large Cake..... Everybody keeps telling me I should sell my ribs in a store or open a restaurant...... I told my wife I would do the food and she can do the deserts she made the cake I mean made the cake.... Took her 3 weeks of prep and 5 hours to bring it all together.....

Next time i will grab pictures....
 
3 weeks to make a cake, did you grow it?

Glad everything turned out good, but your gonna get some grief about not posting any pics... you have been warned

" NO PICS"  Don't believe a word of it. "NO PICS" it did not happen.   TOOOO Bad, it makes a good tale.  Would have made a Great Post, if there were pics to validate it.
 
I understand what you guys are saying about no picts.... I am understand and taking the greif like I should and yes you make think it is a tale, but it is not, go look at my facebook page and then my wife's the photo album is her neice's grad party.... That is the proof of the party not food picts... I will make up for it on the next posting... Even if i have to take them with my phone it will get done......
