Time and temp help: cornish hens

    My next attempt on the smoker will be some cornish hens. I have seen a couple of brines and rub recipies here that looked really good and I will probably use one or more of them just to try them out.

    What time and temperature formula do you find works best for cornish hens? Does stuffing them change the time/temp formula?

    Baby Birds are really good. I would brine them maybe for only 2-3 hours at the most for they are very small. Then just some then at about 275* for maybe a couple of hours but we do smoke by temp not time here. So with that said you should smoke the birds to about 165* in the breast.

    Like Balli said^^^. Get some good therms and calibrate them, I firmly believe that's the most important tool in the trade. [​IMG]

    They are just baby yardbirds. Treat them as you would do a chix. Check internal temps carefully cause there is less meat to bone ratio. Most of all, experiment and enjoy!
