Ok, so, this is the first weekend of the year when ribs go on sale in my area of NH.  They're at $2.69/lb (up 10 cents from last year)  Did 4 racks yesterday on the grill (with a smoke packet) and doing 2 racks of baby back and one rack of St. Louis style ribs (for the first time) on my smoker today.

I've not been using my smoker as much (Masterbuilt gas) because I generally can't get the heat low enough.  So, I suspect it'll be a shorter cook time, but I'm keeping a close eye on them.  Here's some Q-View from yesterday

That's a bunch of ribs!
All I use my MB gasser for now is a box to to use for cold smokes and warm smokes with a mailbox snd hotplate. Same problem, high heat. It sounds kind of inefficient, but I got to where I could regulate the heat by propping the top door open a little, not much, maybe a half inch, to let some heat out. I actually think that's why the best door latch is adjustable.
Once you've had good St Louis style you'll never do spares again, but BBs are always good [emoji]128522[/emoji]
