Nice....Miss Louie can get after a piece of salmon. Now for qview, cause I was the original hard head of it. PM erain he got me through it.

I smoked a slab last weekend. It was a complete planning error that worked out pretty well anyway.

I'd been wanting to test a cold-smoked salmon. Lo and behold, my wife came home Friday with a slab of fish! Of course conditions were not gonna be right (temps in the 50s Saturday) but she didn't know that, and assumed it needed to be cured. So we ended up with a partly cured, 220-degree, 3-hour smoked salmon dinner. It was NOT what I'd seek; if I'm doing a dinner fish I don't want it cured, and if it's cured it needs to be smoked at 100 degrees for many hours.

Nonetheless it was delicious! Whets my desire to do the other methods.
