My GOSM was delivered today and I stopped by my local WalMart to see what was in the meat section when lo and behold there was an almost 10# packer brisket marked down to $1.39 a lb. I snatched it up immediately. So for $13.67 I have a really good looking brisket that will be supper this weekend. Oh happy day.

Well hopefully you have some smokes under your belt. Briskets are not really for starters. If you are a newbie, I would do some research and reading. Good luck.
 
Congrats on the new smoker.. Is that a gasser or charcoal type? R ya planning on seasoning the smoker first? Post up some qview of your adventure..

I have done two briskets in a conventional oven. Pretty much done the same way as if I were smoking them. Oven at 225 and cooked until internal temp of about 160. Foiled until the internal temp was 200, and rested for 45

minutes to an hour. Both turned out great. Of course I will have to watch my temps more closely on the GOSM than I would if I were doing it in an oven. And I have read everything I can. Mostly on this forum, but also on "The Smoke Ring", "The Q Joint", and "Barbequebible.com". This forum is by far my favorite however.

I am seasoning it as we speak. And it is a gasser.
 
Congrats on the new smoker and it sounds like you have a pretty good plan my only question would be are you going to pull/chop it or slice it?

Now thats the smoker I started out on many years ago. Now it's a cold smoker for bacons and sausages. I would say congrats on the smoker and don't forget the Q-view for the brisket too.
 
I have a Charcoal to gas conversion GOSM. I assume you will separate the Flat and Point, as I had to do that in mine. And as the others said, post some pics. I have a 13lber out in my Freezer, bought from Wal-mart also. $18.00
 
Had to pick my jaw up off the keyboard when I saw the sticker price on that briskey! Can't wait to see the qview!

and you're right, with the leadership from this site, i'd feel confident doing just about anything.
