This has never happened to me before

Bought a case of bone in pork butts. Put 4 8lb average butts on the smoker yesterday. They went on the smoker at 10am. By 9 pm 2 on the lower rack were around 190 the other two were setting at 160 to 165. I couldn't stay up any longer (get up at 3am for work) so I pulled them from the smoker and put them in my insulated food keeper figuring I'd put them in the oven today to finish up. They have been in the oven at 250 since 1:30 this afternoon and it's now 7pm. The two that were at 190 are finally up to 195 200 and the other two finally reached about 170.

The two at 190 will probably be ready to be put back in the food keep in a hour but I don't know that I can wait for the other two again. I turned the oven up to 265 to try to push them through.

Thinking the other two that have further to go may just stay in the oven until I get up again at 3am. I will turn the oven down to maybe 225 or so before I go to bed at 9 or so.

Generally I pan my butts at 165 and they get to 205 a couple hours later. Normally they are done on the smoker in 10 hours or less. Weird.
 
Just when you think you have it all figured out, something like this happens.

I guess you just never know what will happen when you fire up the smoker.

But one thing is for sure, I bet they taste real good!!
