Thigh and quarters going tonight

    for the colts and ravens game, thighs are my new favorite meat, they hold the injection good, cook great and taste wonderful, trying some new things with my quarters, got a litttle grape wood for flavor

    Welcome to the thighs club! Some of us been eating on those delicious thighs for a while now.

    Breast are nice and convienent, but tanned meat of the thighs is satisfying[​IMG]

    do you inject your thighs and do you cook them on a pan or straight on the grill or smoker

    Some are good injected and smoked and some are good as sushi[​IMG]

    Never brine, but I have marinaded in Mojo Crillio (4 hours tops), then a nice coating of Memphis Rub.
    I'll smoke them for till 160º internal, then finish them on a hot grill to crisp up the skin.
