Well they say pride comes before the fall, ha! Pork stalled out on me, probably because I was thinking it was going to be ready for dinner! It's 4pm and it's at 181 degrees. I wrapped it in tinfoil (should have done this earlier!) and I'm hoping it hurries up a bit! Fat chance!
That's why I always do my butts the day before dinner! My last two took 20 hours

. The two before that only took 16. At least you have the turkey to fall back on if needed!
 
So the butt was officially at 203 degrees at 715pm - nearly 16 hours! I wrapped it up in some towels and threw it in the cooler for an hour before pulling and it turned out great! Moist, tender, smokey - can't ask for much more! I made up pretzel bun sandwiches with some BBQ sauce and wow was it fantastic! Now to tackle the turkey... we're going to cut that up an eat it tomorrow, no more room left for it!





 
Looks like it came out great!

Way to hang in there - don't get discouraged by the time it takes to cook - I have had some go over 20 hours at 225-240.  

The last butt I cooked I cranked the smoker temp to 275 and they came out great!  Not as smokey as I like but that was my fault not adding more wood as I went through the smoke...brain fart - it happens.

Great job on this one!!!

Ha, forgot to update about the turkey. Something went terribly wrong. It was like smokey cardboard. Dryest thing I've ever tasted. Not sure if the turkey was any good or what. Seems like it shouldn't have been a whole lot different to smoke than anything else, so I am having a hard time blaming it on me being a noob.

Oh no!!! So lets have some more info on your process. Did you brine and if so what was the brine and how long did you brine? What was the smoker temp and what IT did you cook the bird too? Did you wrap and let the bird rest, how long? Was the bird a natural bird or a pre-injected bird?
