Good morning and Happy Thanksgiving to all.

I have an inexpensive Taylor single prob digital therm and I just bought a Maverick HD32 single probe therm. I am doing a Turkey and I want to make sure my MES30 temp is right and more importantly my IT* on the bird is spot on. I had a feeling that my Taylor therm is off. I have an MES30 and still haven't figured out if the temp gauge on the unit is accurate as I have heard they can be offound by 15-20 deg. I had the 2 digital therms side by side last night in the house alone get with a digital poke in the meat therm. They all read 71 deg or with in 1 deg of each other.

I turned my smoker on and set it at 250. Placed both probes just inside the vent to get readings to see if they the same and at what temp. As it stands right now...

MES30 gauge is set at 250, reading 256

Taylor therm is reading 255
Maverick HD32 is reading 260.

Do these probes fluctuate while the smoker is heating up and then level off? Are they not that accurate when not actually in the meat? And now in the bird the Taylor reads 55 and the Maverick reads 46. I don't wanna under or over cook this bird.

Boil some water. While the water is boiling, place the probe into the boiling water. Water boils at a constant temperature. Note what the thermometer reads. If it's off a couple of degrees, note that.

Google your city and state to see what the temperature of boiling water is.
