... there's a turkey breast waiting for me in the fridge. I have the time today for a smoke, and I think I'll enjoy the day.

Time to fire up the offset stick burner. The question is, apple or maple? Hmmm ...
 
I kindled with maple and am now smoking with apple chunk on a bed of charcoal.

The hanging rack in the lid didn't clear the turkey. I'd wanted to remove it anyway since I've never used it, so I tried to disassemble the hardware, with the firebox lit. That didn't go well so I went in there with big bolt cutters and nipped the rack out.
 
Whisper , I sure hope the Turkey was worth the loss of our Rack . . . may the Smoke gods see your Modification and give their blessing . . .

So here's the result. The fuel fizzled as the IT got to about 145 so I settled for that. The meat was juicy and no red juices.

I took the meat off the bones, which went into a crockpot to make smoked turkey broth. Time to soak some beans.

As for the rack, it might find some use over a fire. I never did use it and it cut the vertical clearance under the lid in half. Now I can fit a butt in the smoker.

One side note - I was using lump, and I was reaching the end of the bag. I poured it out into a tub, which was MUCH better than digging around blindly in the bag.

That Lodge oval casserole is named The Lifeboat.
