You know, its really nice when the grass has just been cut and the side walks edged, the flower bed weeded, sitting in the hanging swing on the front porch after I've paid the kid that did all the work....... <chuckles>

Up here at this time of year, the only strawberry we could have would be Strawberry flavored "Snow-Cones".

I was so excited about how it tasted I completely forgot about this thread. AND I had to share something this good. I am guessing the quality of the berries has something to do with it also. This is seriously better than sex, I have joked about that before but this is serious!

Bear, think about a strawberry syrup snow cones..... ZOMG!! They'd make 'em illegal due to being immediately habit forming! You could be the NE distributor........

I love peaches too! Just too early for fruits. Fresh peaches around here are getting nasty hard to find. I think peaches take time for the tree to develop, and then every 10 to 15 years they get blighted. Folks get tired of it. I'll just put the word out and hope some kind person here has too many peaches.

BTW Apricot makes awesome liqueur!

Actually I think people in the North love fresh Strawberries more than you, because they're more rare up here. We can only get them about 2-3 weeks a year. Unless we buy the ones picked green in CA, and shipped----Those are "Juice-Free"!!!

8 1/2 jars of strawberry jelly (process)

6 1/2 jars of freezer strawberry jelly


LOL... That's it for the jellies....... I swear, with the previous 7 that makes a total of 22 jars. RAAR!

I've learned to always get what you can because if you count on next year, it'll be the year of no berries.

I was raised the same way,   Pack away everything you can and don't count on good crops next year.
 
And ya know it always holds true when you don't heed the wisdom. Maybe just country thinking, I assume.

City folk thinks food comes from a store. My grandpap was the one that taught me, and I have seen it being a farmer.
 
I was down to my last 2 quarts from last year , but the new '16 crop is here....happy dance

Bought a Food Saver for Christmas and tried to vacuum seal quarts of strawberries, but I end up sucking some of the juices out the bag and the bag never vacuums down. tried put the settings for moist and used the gentle cycle for the vacuum, but no luck.

What am i doing wrong.

Try freezing them first in resealable bags, then vac seal them. No problem sucking the juice into the seal.
 
That's what I do with anything that has liquid   Works Great

I just frozen mine in Ziploc bags. If you sugar them when you clean and slice 'em then they make plenty of juice overnite to completely cover the berries so there is no freezer burn. I know I had some left over from last year, I always move them to the front for first usage. Then put up another 16 pints this year. Never had problems with strawberries with freezer burn. Two years is the longest they ever could sit here. You can tell we like strawberries.
 
I gotta go get some Strawberries , also be glad when peaches are ready down to 2 bags
