The start of my smoking addiction

    I purchased a used Cajun Injector XL smoker yesterday. I've wnted one for quite a while now and couldn't pass up this deal. I smoked 6 skinless breasts last night. Mesquite wood because the bag was open, S&P and garlic powder. Taste was there but kind of dry. Put a small brisket on this morning. Used Montreal Steak on it and using mesquite again. Will throw some ribs on in a bit as well. Looking forward to learning a lot for you guys.

    When I smoke chicken breast I usually inject and wrap them in bacon. That really helps with the drying out that happens.

    Thanks for the tip MJeffcoat! I will post more pics as I go David. Any advise on the ribs?
