I'm new to smoking meat in smokers but I have some experience with open pit BBQ's. Cooking 200-300 lb. pigs on an open pit is expensive in both time and $$ so it never became an issue with my "addictive personality" (I prefer to think of it as an enthusiastic personality!!),
BUT since Xmas when I was given a GS30D by my wife I AM HOOKED
. I have come up with a "Smoking Meat Addiction 4 Step Program" to help me cope with this new addiction of mine.
Step 1) Get some meat-buy, borrow or kill
Step 2) Smoke meat
Step 3) Eat meat
Step 4) Repeat as necessary to satisfy the need
I'm finding that this works well for me although I actually have a Step 5) Remember to take cholesterol meds at supper.
I hope this helps anyone that needs it. Gotta go rub my meat so it will be ready for smoking later
