Hey all, smoked two racks of ribs today. Last Saturday, smoked a 6lb brisket and 9lbs of pork butt.  I have done my research here prior to my smokes.  AWESOME info and my smokes were all a success.  I have been working my Weber 22.5 kettle for quite some time now and have been very pleased, but with the WSM 18.5, I feel as if I can do anything now.  Just wanted to introduce myself and say "thanks".  Smoking with the WSM is a new adventure that I am looking forward to...just as much as I am learning new recipes/ideas from this website.
