Hello All!

Just checking in per the marching orders.  I am from NorthCentral Wisconsin, and just got hooked about a year ago.  I've been a deer hunter for about 20 years now, and used to love when dad would get our deer magically transformed into sausage, snack sticks, and jerky.  I started out simple making some Jerky from pre-mix, and it was great!

Since then I made about three batches of summer sausage, and just a couple weeks ago ventured into fresh sausage by making some johnsonville clones off of len polis recipe.  I haven't had to throw anything a way yet, so I consider that a success.  As a lurker this site has been extremely helpful, and as I start dipping my toes into the fermented sausage end of things I hope to learn even more.

I did do a chicken, and some ribs that turned out pretty good, but I'm hooked on sausage!  I figured I have lurked long enough, I could finally post an introduction and start contributing.

Happy Smoking!
