New regulations permit slaughter of horses again.

    I have never eaten any.

Looked around for a few sausage recipes..nothing yet..

Anybody here have some experience with horse meat??

I watched an episode of the Layover on the travel channel last week and Bourdain had it.  The layover was in France.  Maybe some french cook books would have some recipes.  Never had it but if it were in front of me I might try it.

Now I have never tried horse meat but hell Markie will eat anything. I have always said that you should try everything twice you or they might have screwed it up the first time. Show me Mr. Ed and I'll make hamburgers.

Maybe someone can bring some to Jerry's in April and we can all try it.

I had a steak once. It's different from beef, much leaner and more flavourful. Not in a gamey sense, but different. I found it similar in taste profile to bison or ostrich.

I had a terrific spaghetti with meat sauce meal while in Vienna, Austria and the cook told me it was horse meat. I ate way too much of it and was sick the rest of the night.

Saw it in the meat market as a kid... mom wouldn't cook it.... (that I knew of)

I've eaten moose and I would think it would be close to that too ????....

    OOOOOOOOK

I have never had horse meat to my knowledge even in the foreign country's I was in. My personal opinion is; I don't see it happening, as the animal activists will have a hay day with it. I can just see it now, my local butcher or grocery store having horse meat in the case and a mob out front picketing the place. On the other hand it would create jobs, and lord knows we need to do that where ever possible. So in that aspect it would be a good thing. I don't know which side of the fence I sit on with this issue.

Probably be hard to get...Most of the meat would be shipped to Europe and Asia, where it's treated as a delicacy.

Since posting this I have been rocking Google..

Most countrys, except ours of course, sell and enjoy horse meat.

It looks like they have a fair amount of fat and the steaks look tasty.

    Lots of sausage pics too.

Looks like S. America really enjoys it as does Central/Eastern Europe.

    MMMMM Trigger sausage....

That is too bad... I was thinking if it was lean, it could be the mascot of the Y.A.W.Y.E. group....[IMG]

Years ago when I was working with my dad in our custom processing plant, we had a couple from France that had us process a horse for them. I flat out told my dad that I would not cut up a horse no matter how much I was paid and the French couple claimed that they ate it all the time at home. I told them to go back home then and eat horse there. Dad wasn't too pleased with me and made me help him process it anyway. Needless to say I wasn't the employee of the week.

I did inform my horse loving friends when these people would be coming to pick up their horse meat and left it at that.  When they drove down the road to the shop, they were greeted by close to 70 mounted protesting riders. When the couple paid for the processing, dad told them to find someone else to do their meat cuz he wasn't going to do another horse in his life time.

I could tell that he horse was grass fed as the fat was more yellow, much like grass fed beef.
