I started smoking about 2 years ago with my Char Griller Smokin Pro. I have had some great successes with pork shoulder, ribs, turkey and chicken. I have learned a ton from when I started, which of course leads me to how much more I want to learn!

My best advice for new people starting out... pork shoulder is very forgiving and delicious :)  Don't get hung up on secret rubs and sauces and woods, just concentrate on the basics and you can't go wrong!

I struggle with maintaining temperature and the amount of charcoal I go through in my smokin pro but it's paid for and I still make food that makes my family go yum!

I look forward to learning from all of you and contributing when I can.

Bet,start a log of your smokes now and use it to improve your skills. There are some down loadable forms out there(try our wiki), keep track of fuel,time,temp. ,type of food cooked,outcome of the Smoke,taste and comments. I mention this, as it helps me and a lot of others here;records are great.
