Thanksgiving Day Sides?

    Hey all. I'm getting excited for my turkey day smoke. Can you all think of any cheese-free sides I might smoke along with the bird? We already have sweet potato casserole, corn bread muffins, roasted parsnips and apples, and balsamic roasted brussel sprouts cued up. But, I feel like I want one extra special smoked item.  Thoughts?

    Smoked Brussels sprouts. Blanche them first for a minute or two then put them on the smoker. They kinda rock.

Hello.  I'm not of of the "chefs" of the site but here is my 2 cents.  I would leave the muffins alone but each and every other side you mentioned could easily be smoked or at least pre smoked before finishing in the oven.  Smoked scalloped potatoes?  I assume you are having some sort of stuffing?  Smoke the stuffing.  Smoked cranberry sauce?  "Chestnuts smoking on an open fire" ok that's Christmas.  Anything you can cook in the oven can be cooked in the smoker.

    NOW!  Here is my blasphemy!  I find that if the whole meal or most of it is smoked then it tends to all taste the same.  Just my opinion.  If I wanted to add an extra touch to Thanksgiving I would smoke another meat and leave the sides alone.  A pork butt ( sliced not pulled ). A pork belly.  A goose.  A duck.  VERY thick ( 1/4" ) slice unsmoked bacon to be smoked.  Brine or don't brine but that is the way I would go.  Good luck.  Keep Smokin!

    A good fresh Cranberry Sauce...

    Boil Berries till they burst open

    and Sugar to taste  I like a lot...

    1/2 tsp pectin

    Fresh Orange juice ,with some of the Orange( meat)

    Orange peel gratings 1-Tbls. or more.

    Simmer to thicken and enjoy . . .

    Wrap a small wheel of Brie cheese in some puff pastry and smoke it up till golden brown, Serve with some good crackers and slices of baugette. Gooy smokey goodness!
  6. We like to make Cranberries with Pomegranates together. Makes a nice sauce.

    I'll raise my hand for the third recommendation for fresh cranberry and orange sauce.  Mmmmmmm.  Wouldn't smoke it though.  It's on my menu.

    Another thing on my menu is Garlic Roasted Potatoes?  They'd smoke up nicely.

    I do have a thought. I am sure there was someone's special name a ttached but..........

    Somewhere on this board I have seen some beautiful cored onions, they were stuffed with sausage I believe, then wraped vertically and horisonally with a strip of bacon. You need onions with thick juicy layers, but get those babys small so you can give one to each person.

    You could even slice the whole onion in half the easily core it, stuff it, and then wrap with bacon to hold it together. If you don't care for sausage, maybe a jalapeno?

    There is also primo recipe for stuffed and smoked cabbage but with sprouts, cabbage would be redundant.

    Jalapeno Raspberry or Blackberry chutney for an additional gravy for the turkey
