thanks to everyone for posting the informative instructions to double smoke a ham. I did one Christmas morning and it was picked clean! Soon easy. Thanks again and Merry Christmas!
 
 
I'm gonna try one next weekend. got one on sale for 89 cents a pound. cheap shank , but hopefully it turns out good

Keep on smokin' guys. A double-smoked ham is a great way to go. I have been scoring the ham and slathering with plain mustard followed by a good dusting of Jeff's rub. When the ham is almost up to IT of 145*, I glaze with equal parts of apple juice, honey and Jeff's rub. I put on 2 layers at 15 minutes apart. Then let the ham rest for about 30 minutes and slice.
