I just want to take some time to thank everyone on here cor helping me get started this past year. I belong to several sites similar to this one, but none live up to smoking meat forums. The lack of general concern for food safety is scary out there in the interweb. People giving advice for some to do things that dont even sound safe, or sanitary in some instances. Perhaps i have been spoiled by smf but i worry about people who are just starting getting horrible results because of bad advice, or unsavory practices. I have pointed a few here in the past few months, because i know that nothing here is recomended that is not up to snuf with fda food handling guidelines, and then some in most cases. The expertise, and strong fellowship bewtwwen members is amazing, and inspiring to me. This was a tough year for me personally, i have been battlimg parotid cancer since june 7th, and the fight took alot out of me, reading on this forum, talking to people, and smoking meat has got me through so much. This family of the smoke, brothers and sisters of the que as it were, i just wanted you all to know how very cherished and helpful you have been and continue to be. Just remember....smokin ain't easy....but it sure is fun.
