for the last few weeks i've been reading everything i could about smoking food (deer stix) how to build a smoker ,how to operate a smoker,and i want to thank this site for the best info out there !!! seemed like every time i found new info i came back to this site to verify,my smoker cost me 6 bucks to build and 3.97 for duel burner hot plate and 5 bucks for a mini weber, over this past summer i cut up few cherry trees so i'll have plenty of smoke ,

my 1st run was 20 lbs of deer stix ,,store bought kit 4.52 x 2 ,  17 mm mahgany casings 6.40  x2 and insta-cure 1.52 from echo hill (small amish store) near me these turned out very nice for me

started out with just hot plate took temp up to 135 for 2 hours then started up mini weber( bottem vent almost closed top opened ) took temp up to 180 opened all vents in my smoker  added wood for smoke put water pan on hot plate, feed the weber every hour or close to it also added hunk of cherry each time i added charcoal  the temp didnt veri much 160 to 190 had to add water twice took enternal temp to 152 about 6 hours total !! thinking i may have over dried them a little rinsed with cold water when done  dried and hung them i spare fridge had for breakfast this morning

started with 16lbs  deer meat 4 lbs pork lost about 2 lbs in grinder/stuffer

finished with 14 lbs of finshed deer stix ,, better then i'e paid to have done for me !!

  but it turned out very tasty , son and wife both took about 2 lbs each to work/ school  ,wondering if they shared ?

Im sure people around them smelled the stix

First off welcome to SMF There Dano. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
