Hello I'm Daniel from Dallas, Texas. I've been smoking on my slightly modded Char-Griller Smokin' Pro for about two years. I have a moderate skill level. That said, the first (and only) brisket I've done ended up being one of the best brisket's I've tasted. It was a 10-lb prime packer from Costco. It's all downhill from here, right?

When we moved into our house I mentioned that the only thing the house was missing was a grill. My real estate agent went out and bought me a char-griller as a house warming gift. I didn't know much about smoking but I considered myself a BBQ aficionado, so I started cooking on it. Turns out it's my favorite new hobby.

I've been a long time reader but I finally decided to sign up today. I look forward to contributing!
