Don't hold your breath. My wife, thought she'd help out and vac packed everything and put them in the freezer! Something about needing the fridge back!

I gotcha Case... I get that too sometimes... LOL. Well for what it's worth, I think it all looked real nice & hey... You don't have to vac pack now.... Beer thirty ! Thumbs Up

Thanks Tom! The flavor profile of these are great. I think they'd be great on a Bahn Mi bun with some pickle veggies and a bit of sriracha mayo!

So as I go here's why we got.

This is going into the blender.

4 cloves garlic
Thumb of ginger
One nice pack of thai basil
Two Serrano chiles dried from our garden

To this I'll add two tablespoons lemon grass paste ( I would've used the sticks but they looked horrible!)

Tablespoon or twist of fish sauce

Tablespoon of lime juice

1/4 cup or so of coconut milk.

2-3 tablespoon curry paste

Maybe corriander. Wish I'd picked up some fresh cilantro.

Keep in mind this is just the plan. May adjust as I get into it. I will be doing a fry test too.

That looks really good.  That is going on the list!
 
I made a batch tonight and they were really good. I use fresh lemongrass and dried pepper. I will add more pepper to the next batch, but we have four packs in the freezer now so it will be a while.  Thanks for sharing!
