I am new to this form, but not new to BBQ.
I have an MES and my first attempt with chicken was the same as the other posters got a rubbery dry skin.
But I have been doing this for years (taught to me by an old Polish Guy)
Real simple:
wash chicken
pat dry chicken
slatther with a good MAYO
cook bone side down and leave it alone until it gets to temp
Try will not be disappointed
