I'm smoking a spatchcocked chicken at 220.  My MES40 is set at 231.  I look at the temp on my Maverick go from 214 to 235 and back.

At first I kept getting up and adjusting the temp setting on the control panel until I got tired.  The last hour I just let it swing back and forth.  Is that swing of temps common?  I expected the temp to fluctuate but not to that degree.  Is this your experience?  Thanks.

Depending on the time of year, mine can swing from 215° to 240° when set at 230°.

Just go by your Digital therm (Maverick), and try to get the average of the swing to be where you want the temp.

Looks like that's what you're doing----Just like an Old Pro!!
