TEMP PROBE DOES AND DON'TS

I HAVE READ WHERE YOU SHOULD NOT STICK TEMP PROBE INTO YOUR MEAT UNTIL IT HAS BEEN ON SMOKER FOR 1-2 HOURS TO AVOID PUSHING BACTERIA ON THE OUTSIDE OF YOUR MEAT INTO THE CENTER - THE QUESTION THAT WAS BROUGHT UP YESTERDAY OVER CHRISTMAS DINNER WAS WHAT ABOUT INJECTION - AREN'T YOU DOING THE SAME THING BY INJECTING MARANAIDE'S INTO MEAT BEFORE IT IS COOKED - THIS WAS A HEAD SCRATCHER TO ME - WHAT ARE YOUR THOUGHTS - HEARTLAND SMOKER

    By all means injection is the same thing.... whenever injecting or sticking probe in early (which I do) ... just have to make sure you get to 140` IT within 4 hrs....
