Hi,

Im new to smoking...  Ive searched through the forums but I cant seem to find a fix...

I have ordered a Maverick ET 732, but in the mean time until it arrives Im still trying to figure out how to get my internal temp stable.

The Materbuilt model I have is 20051313.

I've been smoking based on the meats internal temp.  I've done Salmon and some pork loin.

The issue I am having is the internal heat from the stock themometer shows 250-350.  I dont know how accurate that is either...

Ive upgraded my water reserve and I went with a cast iron skillet over my stock chip holder so I could use Chunks rather than chips to reduce reloading time. 

Cook times have been just about as everyone on here notes sometimes a little shorter like my pork loin to get to 165 internal temp takes about 2-2 1/4 hours.

Any ideas or just continue smoking based on core temp and ignore what the stock thermometer is saying?
