    Hello all,

I have a new smokin-it electric smoker. My understanding is that you put your wood in your fire box at start up and that is it. So if I start off with wood that is not pre lit a bit I can't see how I can get TBS? Did that make sense? As far as I know with the electric you put the wood in at start up and don't ad at all. So I initially get thick smoke. then it mellows out. Any input is appreciated.

    Thanks,

    Keith

The Smokin it is almost the exact same configuration as the SmokinTex. I have been using that unit for several years. The box in the bottom is for wood chunks. The electric element will heat up and start the chunks smoking.   You have no way to control the amount of smoke other than the amount of wood you put in at a given time. To solve that problem I use an A MAZE N SMOKER. Todd is a member here and his ad is in the side panel on the right. I would get the AMNPS - pellet smoker. It allows you to burn both pellets and sawdust. Lots of folks here use them very successfully.

    Good luck and good smoking

Yup---The only way I ever found to get light smoke with my electric smoker was to only put a few chips in at a time, and do it every half hour.

Then in walks a Genius from Minnesota, with a thing called AMNS---And then better yet----AMNPS!!!

You can get an AMNPS from him (Todd), and throw some pellets in there, and you're smoke problems will go away.

Very cool, so do I still use my heating element?

You need the heating element, unless you are cold smoking, to get the smoker to temperature.

The only time I use me heating element for making smoke is if my pellets (or dust) burned out, and I only want about another hour of smoke or less.

Then I'll throw a few chips in the chip drawer (above the element).

If I need more than another hour of smoke, I'll pull the AMNPS out, load it again, light it & put it back in.

ok, I am sold! So if I were to cold smoke I would just use the AMNPS and I wouldn't need the heating element or the cold smoke plate?

Correct - you can retire the cold smoke plate or just set the AMNPS on it.
