When I go to football tailgate I do not have enough time to smoke meat.  I'd like to smoke the meat a day ahead of the big game and use a gas grill to reheat the meat.  Any suggestions?  I was planning to smoke some country ribs or spare ribs.  Reheating will retain the smoked flavor.  And I can add some wood to the grill for reheating.

Follow the prcedure, 3-2-1, except change it up a little, say 3-2.5-.5 with the last half hour on the Grill using Indirect Heat to finish them...

Welcome to the Q Crew and if you haven't already do a search on 3-2-1 then go over to Roll Call and introduce yourself...We got your Back...JJ

If you use the 3-2-1 method then go ahead and do the 3 and the 2 then put in fridge game day take them out of the foil and do the 1
