Greetings TW, If you need a Humus recipe this one comes out pretty good.
2-16 oz cans of chick peas
3 1/2 tbs of tahini
2-(or more) cloves of garlic
3 1/2 tbs of olive oil
1 1/2 tsp of salt
1 tsp of paprika
1 lemon, juice only. 1 tbs of bottled lemon juice will work
Drain the chick peas but hold the liquid back. Mix it it together except for the paprika and blend it up good. I use an immersion blender (less clean up). Add liquid until you get the consistency that you want, put in a container, drizzle more olive oil on top and sprinkle with paprika. It sure makes a cold beer go down easy!
My discovery of tahini was quite a revelation too, I love the stuff!!!
As you've said, it's not always available in rural areas, and certainly wasn't in my area back in the 80's.
While in high school and after graduation I worked for a fairly large beekeeper/honey packer and we'd sell honey in the NY city area to health food stores, which is how I was introduced to it.
It's awesome stuff, I love the flavor.
