Featured Sweet Thai Chili Wings

    I do love my wings and it was time for one of my favourites, Sweet Thai Chili Wings. You can buy Sweet Thai Chili Sauce but I make my own.

    Ingredients
    • 125 ml (1/2 cup) water
    • 75 ml (1/3 cup) rice vinegar
    • 125 ml (1/2 cup) sugar
    • 3 ml (1/2 teaspoon) dried ginger
    • 5 ml (1 teaspoon) minced garlic
    • 5 ml (1 teaspoon) chili flakes
    • 5 ml (1 teaspoon) ketchup
    • 10 ml (2 teaspoons) cornstarch
    • 10 ml (2 teaspoons) cold water
    •  
    Instructions
    1. Mix all ingredients except cornstarch and water together in a small saucepan.
    2. Put over medium high heat until boiling.
    3. Mix the cornstarch and water together.
    4. Put the cornstarch slurry into the sauce and cook, stirring, until thickened and shiny.
    5. Remove from heat and cool.
    6. Store in the refrigerator.
    To make the wings, I fired the pellet smoker up to 350 F. 

    I injected the wings with Garlic Creole Butter.


    I smoked the wings for 25 minutes.


    I turned them and smoked for another 25 minutes.


    I tossed them in some Sweet Thai Chili Sauce.


    The finished product.


    These are a favourite around here. Nice and crispy with a sticky sweet sauce!

    Very nice! 

    My closest Asian grocery is run by northern Burmese and they have a lot of Thai products including sauces whose labels have an alphabet I don't even recognize. Sometimes there's a little sticker somewhere with some English on it. Man some of those are hot!

    Recently I harvested some habaneros and scotch bonnets so I made a sauce. This time I included some frozen lemonade concentrate so it became something similar to a sweet chili sauce.

    Disco, looks like another way to have wings instead of the Franks and butter. Soon to give these a try. One question are they hot. My wife isn't a big fan of heat. She sweats from eating BBQ potato chips.

    They look amazing!

    I love smoked wings but my wife won't eat them unless the skin is very crispy.  I got tired of frying them after the smoke so I gave up but I sure do miss them.

    Derail, I like hot stuff but anytime I get the hottest wings at a restaurant, the level of salt is insane. I don't know why they all do that.

    That lemonade sauce sounds great! As for some of the Asian sauces, I'm with you. I love them but some need fireproof utenils!

    No, this is quite a mild version of the sauce. You can increase the heat by upping the chili flakes if you want to live dangerously with the missus!

    My missus occasionally insists on very crispy wings. I fire the smoker up to 400 F or put them in a 425 oven for twenty minutes turning once. They get too crispy for my tastes but She Who Must Be Obeyed must be obeyed!
    I'm with you on the salt but, to cut them a break, it is a fact that adding salt does meet more peoples taste than less salt. I have cut way back on my salt the last few years and find most fast food too salty now.

    Hey Dave...  Garden didn't happen...  I will do a small raised bed this fall...   I'm gonna try that sauce...  See if I can duplicate Mae Ploy's sauce...   That's my go to...  on fish, pork, chicken and rice...   good stuff...
