Sweet Ribs

  1. Picked up 2 racks last night for $1.89 lb. Put salt, garlic and onion powder on and let set for about 30 minutes while getting smoker ready. Rubbed down with mustard then BBQ rub. Smoked at 235 with hickory for 2 hours. Baised every 30 minutes with 1 part apple juice, water and cedar vinegar, tablespoon of the rub. Wrapped in foil after I put some brown sugar and honey on and cooked 2 hours. Removed from foil and painted with BBQ sauce. Cooked 30 minutes.
    Came out awesome. Very sweet taste and tender. Only critique would be lite on smoke.
    Rub is on.
    Fixing to mop.
    Ready to serve.

    Excellent ribs, my friend. So the spray mixture was equal parts of juice, water, and vinegar? The last ribs I smoked turned out good and weren't dry, but they were missing something. I believe a misting of these fine juices is just what the doc ordered.

    I only wrapped ribs one time in my MES and our family thought they were good but same comment. Light on the smoke. Next time smoke without wrapping, if doing baby backs I jokingly call in the 5-0-0 method. Seriously the MES hold enough humidity that the ribs will not turn out dry. I add sauce to my ribs and sauce them at the ~ 4hr mark (baby backs)

    Haha I used your 5-0-0 method on my last rack and they turned out excellent on my Mini-WSM.  It was a trial run on some new rub so aside from that the texture, moisture, and everything else was great.  I will probably use this method on all ribs from now on.  Less hassle with great results.
     
  5. Next time I get some at that price I think I'll get a extra one and do it that way and see if I can get more smoke taste.
     
  6. I mop ît on, the rub I add to the mix didn't spray well with my bottle.

    I agree with no foil. Did that and came out great, nice smoke flavor and moist.

    Yeah for sure. That would make sense. I'll give that a run this weekend

    Once you foil, they wont get any more smoke as well.
