Hello...... I'm Big Ernie from the great state of Minnesota and I now have a masterbuilt 40" smoker and she is all seasoned and ready for use. This site has me all pumped up to start my new smoking hobby. I purchased some pork belly and just got it all rubbed down and in the fridge and took out a pork roast for next weekend. Might have to try some fresh backyard hard boiled chicken eggs! Hopefully it all turns out kind of nervous about doing all this at once but Go Big or Go Home right.. Hopefully I can figure out how to post pictures so I can share. This site is truly an awesome site for newbies like me! Thanks again for all the great info...

I use an MES 40 as well, there are some learning curves with it, but it can put out great Q! First suggestion would be grab yourself a good dual probe thermometer, I use a maverick 733. It's pretty essential since the MES can read up to 40 degrees different from the actual temp. The dual probe is great since you can monitor the chamber temp and your meat internal temp. It's well worth the $60-$70 bucks. Anyway it looks like your well set on you way to some great BBQ, I look forward to seeing some.
