Ok, We did some spare ribs this weekend for the Superbowl and they had a great taaste but they where not falling off the bone!

Started out by putting a rub on the rib Saturday and then in the fridge wrapped untill about 9:00 AM, Started the Electric Smoker at 205 degrees and put the ribs in at 9:15, I pulled the ribs at 11:15 aqnd wrapped in foil with a little bit of Pear beer as the liquid and back in the smoker for another 2 hours, then out of the foil back in the smoker for an hour then we tossed them on the Grill for a minute or two to get some seering!

What did i do wrong?

temp was too low and you seem to have done a 2-2-1. with spares you need to cook them longer, most people do 3-2-1. temp should have been 225 at least. I cook mine at about 250

I will do the 321 method next time somewhere between 225 to 250 degrees!
