So the smoke went fairly well. CharBroil went a little high in temp and closed down my smoke depth a little. But I won't be using it at the competition. So that should just be a home watching the game not the temp gauge thing.


A word about that center rib rack. We established that the thing was inferior. And the cooking confirmed it with bone creep and break through.

Edible as all get out, but not what I would consider competition ribs. The other racks did not have this problem.

So I slice them up and platter them for the guests at the super bowl dinner. Only a few people, but the ribs usually go faster than the sides.

Except for the smoke ring problem from the temperature. Which was largely due to my wine consumption tonight. I think we are ready for the rib game at Havabbq.

Now your ribs look great and so does the sides. You have to get a special hell ya for your presitation I really liked it.

Bob, I've checked the mailbox everyday, and I don't remember getting an invite for the party. But man am I jealous. Those ribs look great.

Do you feel like you're ready for the comp?

What did you mean about the "center rib rack"? Are you talking about a store bought rack that stands up multipule racks of ribs? Hit us with some details since they look drastically different from the plated version.
 
I did not cook it on the comp rig. At this point I am mostly testing coatings and spice mixture as well as rib trim.

I use a charbroil offset to cook them.
