Yeah I think I definitely over did it with the amount of rub and I think I may have trimmed a little to much of the fat. It was still pretty tasty and I know better now for my next attempt. That's the great thing about smoking even the mistakes are good eating usually! [emoji]128512[/emoji]
 
Fairly common mistake for someone to make, especially when doing just a flat with (relatively) short cook time.  Whole briskets are different story:  as the fat renders away on a long slow cook, a lot of the rub can be lost as well.  Not so much on a much quicker flat cook.

So if a little is really good, a lot must be really great?  Ummm...nope.

Thanks Disco. It wasn't awful just not great. Oh well lessons learned will make for a better outcome next time.
 
Looks nice . Was it tender ? Should be with the wrapping .

An oppion , I have a matra , if you are looking , it 's not cooking ! And wrapping is Broiling , !Just my thoughts , While Smoking , do that in the

oven..some of the S/P , will drop off as the fat renders ! And the rest is removable with a pastry brush , or the back of your knife .

The Bark will be great! the Bark is the best part .

Give it a try on a Chucky , cheaper and about as good !

I'll bet a made for a good meal.... and snacks if any leftovers... Mmmmm I could go for a slider right now...  Just wait until your next one, You have more great smokes to look forward to.
