Sunny day meatloaf smoke

We have a nice sunny day today, it is windy as heck and still a little chilly but it’s still a good day for smoking. Had 2.25lbs 80/20 ground beef in the frig so I decided to make a meatloaf. My wife wanted to try the Mc Cormack’s meatloaf mix so I used that. I added some fresh parsley a red onion and I had some high temp cheddar cheese for my pepperoni so I tossed in some of that also. I used crushed Cheez-it parmesan garlic crackers instead of bread crumbs something different? I mixed some brown sugar, ground mustard and ketchup to cover it with. I sprinkled half with Bad Byrans butt rub and the other half is just the ketchup mix. Going to smoke at 250-275 to about 160 and how it looks. I’ll post some pics when done.

I ended up cooking closer to 300 and it was not in the smoker long enough to pick up much smoke flavor :(  It was good and very moist and i will be using the ketchup and brown sugar mix again.

Having issues making the post so the pics are out of order.  Anyway it was good I just need to cook it slower so it picks up more smoke flavor. 

That was the wife's only complaint, not enough smoke.  Only complaint with the meatloaf, there are always complaints about other stuff. :)
 
Looks good and the crackers sound like a great way to go

If you have an Amaze-N-Smoker try hitting it with smoke at a lower temp before you hit it with the high temp... It works wonders since the AMNS somkes continuously...

I don't have that smoker.. I usually smoke at 225-250 tops, I was watching the race and was not paying attention the the smoker temp and it got up too 300 and cooked it at least 1 hour faster then I wanted. Again it was good but I did miss the heavy smoke flavor I usually get.  Thanks for the kind words, who would have figured that something so easy could taste so good.
