Sunday's Smoked Chicken: Q/View

    Here's Sundays smoked/stuffed whole smoked chicken. Stuffed w/carrots, celery, sweet onion and honey. Rub down w/cajun rub inside, under the skin and all over:

    Good looking bird. What did you smoke it with?

    The skin is something I have been workin on. It used to be real chewy. This time I almost made it crisp; it was almost there and had a better texture to it.
    I used a combo of wild cherry and hickory to smoke it.

    Now that is one fine looking yard bird. You did a good job and the skin does look a might crispier too.[​IMG]
