Decided on some beef fajitas tonight. Marinated the beef for a few hours, fresh made black beans, fresh veggies all made on the chargrill. Whipped up some guacamole, pico de Gallo, and some bagged rice (it was quicker). Busted out some pickled jalapeños I made a few weeks ago on a trial run (the need some more time). Not a bad Sunday night meal.

Sure looks good! What cut of meat did you use?

Use daily sirloin tip. Was thinly sliced and ready to go when I was at the grocery stock. I really like flank for this and enjoyed it long before it was popular but it's hard to find anymore.

Looks great but your killing me with the bag o rice,please say it wasn't uncle bens I tried that once it was horrible. Not sure there would have been leftovers if it was served here.:biggrin:

Any chance your over looking the flank? If your not at the meat counter here there rolled up in cryo vac plastic easily overlooked.

LOL! I know it killed me a little bit inside as well but I just had no desire to make good scratch Mexican rice. And it was not uncle bens!

Only two of us so there was some leftovers but made for some good quesadillas the next night.

I could be. Might go to my local butcher on the way home from work tonight and see if I can't pick one up. Or maybe a brisket.
