I was in the mood to smoke something this weekend so I started rifling through the freezer to see what might be a candidate.  I found this prime roast that needs to be consumed.  I rubbed it with some garlic infused oil olive and then put a beef rub on it consisting of kosher salt, pepper, garlic powder, onion powder and an off the shelf Porterhouse steak & roast rub.  I'll let it set for about 4 - 5 hours and go to the smoker with it.

Be watchin this one ! What wood ya using & what IT ya going for ?
 
For wood, I'm using some Hickory, Plum and JD Oak chips.  My wife and I like "pink" so I was planning on 135 - 138 IT. 
 
I just finished eating, and this makes me think I could eat more...Looks awesome... Nice cook!

Miller51, I'm completely full and I want to go back for another slice.  It was melt in your mouth tender and the horseradish/garlic aioli I made put this right over the top.
