NW IN.
Well I just got done with tomorrows dinner prep.I made up some of bob's brine for half of my leg quaters,and the other half I made up some of shootericks,snack bitten chicken rub.The only change I did to it is the wasabi powder,did not have any,so I replaced it with cayenne pepper.
The ABT's are cream cheese and sharp chedder with a slice of swiss cheese.Will post more pics tomorrow!

OH and also have a couple little salmon fillets soaking in brine too.

I was just wondering, do you guys think I should rub my brined quarters with anything?Or just leave them as there are and smoke them?I know it is probably more of preference thing,but just wondering what some of you do,Thanks.
 
I would throw a lite rub on them myself. Everything loks ready to go for tomorrows smoke. Go keep um

The chicken turned out great,the salmon....not so good.I found a brine recipe on here and soaked it overnight.It was way to salty,I may have messed up the brine, or soaking it overnight was to long,I also overcooked it, it was like freeze dried salmon..LOL.I also found the slaw recipe here...it was really good!
