Sunday baby backs

    Baby backs last night. Did 2-1/2, 2, 45 [email protected] about 240.

    For the 2 hr. wrap coated with honey, then brown sugar then squeezed the juice of 2 nectarines for each and added about 1/4 cup of cranberry juice.

    Wedgie lasted about 3 hours with hickory and produced good smoke the whole time.  Stayed lit after initial lighting.

    Those are great looking ribs. You got some very good-looking bark there. Meat looks nice and moist. Just curious: did you use canned beans? If so, did you re-season them or otherwise add any custom flavors besides wood smoke?

    Yes, canned.  I had a large can of Bush's Homestyle and a large can of Country Style that were getting old so I thought I better use them.

    Added brown sugar & ketchup, then cut up and cooked a couple slices of bacon until almost done.  Then added and sauteed onion & green pepper with

    the bacon a few minutes until softened and mixed it all together before hitting the smoker.

    That sounds awesome. I really like Bush's beans--especially their Grillin' Beans. Now, did you eyeball how much brown sugar and ketchup to add for that amount of beans or follow a recipe which included the bacon and the sautéed vegies? I bet it all tasted as good as it looks and reads.

    It was really by eye but I think it was about a little less than a 1/4 cup of each.

    Like you, I can figure out on my own how to doctor up side dishes like baked beans. But for dry rubs and sauces I need to go off a recipe because I'm neither creative nor patient enough to develop my own. I can tweak recipes but starting from scratch is beyond me.

    Very nice ribs....  When you got 3hrs on the Wedgie did you light both ends or just one ?

    One end.

    It puts off a good deal of smoke. I think because of the shape, as it burns it will put off more smoke because more and more pellets are being lit.

    In addition, it is deeper than the tray so more pellets burn at once.  I don't think when I did these that I had filled it to the top either.

    It's possible to get 4 hours.

    Thanks ... I love my Smoke Ring from Smoke Daddy, but am going to take a look at this wedgie anyhow.
