I've been making summer sausage for a few years now and have always had good success. This year I went with a high temp pepper cheese instead of regular pepper jack. Otherwise, same spices same procedure. This year some of my sticks have greenish brown spots scattered around inside. Most are surrounding the cheese squares. Any ideas??
