Successful first Jerky

Made my first attempt at Jerky last night. I used London Broil and Hi Mountain cure. I cut the meat about 1/4 inch with the grain and let it cure for about 30 hours (was going for 24 hours but it wouldn't stop raining). Put it in the smoker at 6:00 pm at about 175 deg for about 4 hours till the meat was 165 deg. It turned out really good, never having home made Jerky before I have nothing to compare it to but over all very happy with it.

Points for trying something new. A little trick I picked up on with the jerky is to hand it with a toothpick between the racks. You can put a lot more in the smoker if you need to and it seems to circulate around the jerky more evenly. Looks shweeeeet!
 
Nice start there... I would also advise you to use the toothpick meathod... You can do so much more with it!

Hey Pignlt, I like that rack and tooth pick method. I will try that next time. I've been eating so much of this Jerky my teeth are killing me. Its not tough or anything, I just have girly teeth or something. I will try to post a pic of the finished Jerky but I'm at a state park in Destin FL with no internet, I'm doing all this from a Blackberry and its a pain in the ass. Thanks for the replies.
