Did my first turkey breast on Sunday, and it was PERFECT! Did a "light brine" for 6 hours on an 8-lb. Honeysuckle White, then 4 hrs @ 275 in the GOSM with dry mesquite chunks and an hourly apple juice spray.

For those of you who haven't done a turkey, ya gotta do it!

Can's wait for lunchtime today for the leftovers!
 
Sounds good, where's the q-view? Haven't done turkey. My Doc (and arteries) would probably appreciate the suggestion.
 
I know, I know. I was thinking "q View" yesterday. I always get odd looks and puzzled comments from the wife when I ask for the digitial camera to take pictures of half-cooked (or even fishished) meat.

She thinks it's really weird. But nothing, I repeat nothing, should come between a man and his 'cued meat!
