Did my first turkey breast on Sunday, and it was PERFECT! Did a "light brine" for 6 hours on an 8-lb. Honeysuckle White, then 4 hrs @ 275 in the GOSM with dry mesquite chunks and an hourly apple juice spray. For those of you who haven't done a turkey, ya gotta do it! Can's wait for lunchtime today for the leftovers!
