Gonna do two this weekend. I've seen a few good recipes around that i'm goona try. Seems you can throw in pretty much anything you want.

I'll be serving 8 people likely so two tenderloins will serve eveyone easily plus left overs probably.

I'm probably gonna stuff one with veggies like the "Inspired Tenderloin" and the other probably with sausage and cheese.

Or maybe apples? My mother in law seems to think a loin stuffed with apples would be the stuff.

Anyones thoughts on that?

The tenderloin you did looks awesome. A bunch of veggies is a great idea.

What do you think of the apples idea?

Apples and pork are like lingerie' and...oops... well you get the pict...! Just account for the sweet of them!

Also being fall..do not discount a cider- NOT apple juice- component for your mop!

I think the apples would be good. Some restaurant I used to go to had pork chops they would cover in a cinnamon/apple glaze. Very Good. You would just have all the apples on the inside.

Or a sausage stuffed tenderloin wrapped in bacon with a cider injection?

Oh geez.

Now you got your mind working. You will wake up in the middle of the night thinking "What if I stuff it with apple sausage, inject with cider, then wrap in prociutto and smoke with pecan? No wait, what if I ......"

Have fun

Sad... and happy- all at the same time. Gotta love food and it's various combinations and premutations. Oh wait..that was a math class... FLASHBACK!

I gotta go eat lunch now. This got me way to hungry.

But then you still gotta stuff the tenderloin, wrap it in bacon, then pack it with sausage meat, wrap in bacon again-then smoke. A double stuffed-maxi fattie!
