I decided to do a stuffed pork tenderloin roast for dinner tonight, along with a few kielbasa that I will suck and freeze for dad and a couple of fatties for tomorrow's breakfast.

I rubbed the roast last night with EVOO and my rub.
This morning, I stuffed the tenderloin roast with herbed cream cheese, spinach, carrots, potatoes, celery, onion and some fresh herbs. Then tied the bad boy up and threw him on apple and cherry wood.

I may have to finish in the oven as I got a late start

or bump up the heat in the smoker after a four or five hours.

I'll make the fatties in a bit to throw on with the kielbasa later. Going to try another biscuit wrapped breakfast fatty.

The Roast was moist and yummy. The flavor in the potatoes was so smokey and good. I'm going to try to make garlic mashed with smoked potatoes some day soon. The carrots weren't quite done, I think next time I'll precook them some.

Made a smoked dressing for the salad that was really good. I might try it on a coleslaw as well. It would be a great sandwich spread or fry sauce.
